Oxidative stress is a phenomenon caused by an imbalance between production and accumulation of oxygen reactive species in cells and tissues and the ability of a biological system to detoxify these reactive products. This is a harmful process that can negatively affect several cellular structures, such as membranes, lipids, proteins, lipoproteins, and deoxyribonucleic acid .

Garlic has been known not only as a flavor enhancer, but also as a food that has high potential antioxidant activity. However, some people are reluctant to ingest raw garlic due to its unpleasant odor and taste. Therefore, many types of garlic preparations have been developed to reduce these attributes without losing biological functions.

Downsides And Side Effects Of Black Garlic

Garlic and black garlic are considered safe functional foods. Black garlic, in particular, is noted for lacking toxicity.

Negative reactions to black garlic are rare. But in a few cases, side effects have been reported:

  • Allergic reaction. A 2017 review notes that one woman developed pneumonia as a delayed-onset allergic reaction to black garlic.
  • Blood thinning. Using black garlic a whole bunch can produce an anticoagulant effect, which may be an issue for some people who already have blood clotting problems or take anticoagulant medications. It can also result in excessive bleeding after surgery.
  • Interactions or contraindications with other meds. Black garlic may amplify or interfere with other drugs, including blood thinners and meds for blood pressure and HIV.
  • Other complaints. Too much of a good thing can become a bad thing. Consuming lots of garlic can lead to bad breath, skin odor, and stomach discomfort.

But since black garlic is mellower than raw garlic, it may have milder side effects as well.

Black garlic is a complex but versatile ingredient. It may have its roots in Asian cuisine, but it works well in countless other culinary cultures.

Health Benefits Of Garlic Throughout History

Hippocrates is an ancient Greek physician who is widely viewed as being the founder of modern medicine. He is credited with this famous saying: Let your food be your medicine. This revered healer used garlic to treat a number of different health challenges.

However, Hippocrates wasnt the only person to recognize the power and value of this humble plant. Over the years, the health benefits of garlic have been tapped by several different cultures and civilizations:

  • In ancient Egypt, garlic was used to help laborers improve their productivity.
  • In ancient Greece, garlic was fed to athletes before they competed to enhance their performance.
  • Garlic was prescribed to support healthy digestion and respiration in ancient China, and it was also used to treat depression.

How To Make It

Unfortunately, the black garlic price can drive many people away from trying this delicious and nutrient-packed ingredient. It can easily cost upward of $20 per pound, which is significantly more costly than fresh garlic.

Plus, finding black garlic for sale can also be challenging and may require you to look a bit beyond your local grocery store.

Making your own at home is a simple and cost-effective way to enjoy the benefits of black garlic without spending a fortune. Plus, it puts you in complete control, minimizing the risk of food additives and preservatives in your diet.

Wondering how to make black garlic? One of the easiest ways involves just two ingredients: a few heads of garlic and a rice cooker.

Simply throw your garlic into the rice cooker, plug it in and make sure its set to the keep warm setting rather than the rice cooking function. Then, simply wait 34 weeks and allow it to slowly form.

You can also use a fermenting box or slow cooker and set the temperature between 140170 degrees Fahrenheit.

Black garlic can be stored at room temperature, but its best to store it in the refrigerator to extend its shelf life even more. Once refrigerated, it can last up to a month without losing its distinct flavor and aroma.

DANGERS of EATING GARLIC // Garlic

Garlic not only affects blood pressure but has been known to have a positive impact on cardiovascular and metabolic diseases, which include atherosclerosis, thrombosis and diabetes.12Garlic exerts an antimicrobial effect13 and has strong antioxidant properties14 that support health and stimulate the immune function. Research also demonstrates that aged garlic is a more potent antioxidant than fresh cloves.15

Additionally, garlic powder has demonstrated a protective effect on the elastic properties of the aorta in elderly adults. The aorta is the largest artery in the body, which exits directly from the heart. Aortic stiffness is commonly found in aging and is associated with an increased risk of heart attack, heart failure, stroke and heart disease.16 However, one study17 found that elderly patients who took garlic powder had an attenuated response in aortic stiffness.

A second study18 showed those taking 2 grams of fresh garlic increased plasma concentrations of nitric oxide . This is a soluble gas your body makes from the amino acid L-arginine. Although its a free radical, its also an important biological signaling molecule required for normal endothelial function19 and to protect your mitochondria.20

So how does black garlic battle the bulge? Scientists believe it removes fat cells by preventing them from forming . It thereby lowers the conversion of concentrated fats into fat cells. Then it breaks them down and converts them into energy, meaning youre less likely to pile on the pounds .

Antiviral Properties Of Garlic Supplements

Garlic also has a long history of being tested against viruses. One study in 198548 demonstrated that garlic had activity against influenza B and herpes simplex. A human trial with 146 participants carried out during flu season showed those using garlic supplements were less likely to get sick and if they did get sick, recovered faster. Those using a placebo were more likely to get sick more than once in a 12-week period.

In a historical review of the literature, it was found garlic is active against several viruses, including flu, the common cold, HIV, herpes types I and II and rhinovirus.49 Early in the COVID-19 pandemic, Vietnamese scientists50 validated the antiviral properties of garlic and showed two of the most common organosulfur compounds found in garlic essential oil had activity against SARS-CoV-2.

The researchers wrote that the results of the lab study suggest that the garlic essential oil is a valuable natural antivirus source, which contributes to preventing the invasion of coronavirus into the human body.51

One Turkish study52 published later in the pandemic wrote that garlic influences the release of leptin from adipose tissue, which helps regulate satiety and plays a role in boosting inflammatory cytokines. They concluded that garlic may help repress the production and secretion of proinflammatory cytokines as well as an adipose tissue-derived hormone leptin having the pro-inflammatory nature.53

Garlic Benefit #: Protects Against Colds

One of the key garlic benefits concerns the immune system. Ultimately, garlic intake can help prevent you from getting colds.

In a large 12-week study, a garlic supplement taken every day reduced the number of colds by 63 percent when compared with a placebo. Additionally, those who took the garlic supplement showed a 70 percent reduction in the duration of their cold symptoms compared to those who took the placebo.

In another study conducted in 2012, supplementation with aged garlic extract resulted in a 61 percent reduction in the number of days sick with colds or flu.

The research suggests there are benefits of eating garlic if you want to reduce the likelihood of coming down with a cold or the flu.

Black Garlic As An Anti

Black Garlic Benefits, Side Effects, and Dosage

Black garlic contains the antioxidant 5-HMF, which deactivates the nuclear factor kappa B, a protein chain.

So what exactly does that mean? If this protein chain is over-stimulated, it can lead to inflammatory conditions, auto-immune diseases and cancer. By deactivating this chain, black garlic potentially reduces the risk of these diseases.

The protein chain is also responsible for the release of cytokines, proteins that control immune responses and can increase pain and trigger inflammation. . Cytokines play a role in the pain and inflammation present in arthritis, atherosclerosis and asthma. Black garlic combats cytokine activity but shutting down the nuclear factor kappa B.

How Does Black Garlic Fight Inflammation?

A study conducted on macrophages suggests that black garlic reduces inflammation by decreasing nitric oxide production and cells that trigger inflammation. It also deactivates the proteins and enzymes involved in the synthesis of nitric oxide and inflammatory cells . This ultimately leads to fewer macrophages, which are a major cause of tissue damage associated with chronic inflammation.

Research is ongoing, but this is potentially beneficial news for those with conditions that cause chronic pain, like arthritis and multiple sclerosis .

Abg+ Supports A Healthy Immune System

In a recent study, it was observed that patients who regularly consumed aged black garlic experienced fewer symptoms related to rhinitis and epiphora 7. These results are in line with those obtained in a further study in which ABG+® decreased IL-4 levels8. Less IL-4 in vivo implies lower activity of B-lymphocytes which in turn leads to lower production of the antibody IgE9. Avoiding excessive excitation of the immune system during allergic processes may mitigate the unpleasant symptoms associated with allergic rhinitis. The immune support provided by aged black garlic is likely a result of the S-allyl-L-cysteine polyphenols present, that are virtually absent in fresh garlic10.

In a recent clinical study of individuals with moderately elevated cholesterol levels, Pharmactive Biotech Products Aged Black Garlic demonstrated its potential to balance blood pressure. The ingredient is cultivated two hours from Pharmactives facility, the company says, and gently processed using green technology. The process reportedly generates very low waste and significantly reduces the environmental impact.

Published in Nutrients on January 18, 2022, the randomised, double-blind, sustained, crossover-controlled trial was conducted at the Sant Joan de Reus University Hospital in Barcelona. The study, led by Dr Rosa Valls, included 67 adult hypercholesterolemic volunteers with relatively high blood LDL levels. Each participant consumed 250mg ABG+ or a placebo over six weeks, with a three-week washout period before crossover. Subjects also were assigned a set diet that excluded lipo-lowering and anti-hypertensive foods.

At six weeks, the extract was associated with significantly reduced diastolic blood pressure by an average of 5.85mm Hg on average compared to the placebo. The result was particularly evident in men. A reduction of just 5mm Hg of diastolic blood pressure lowers substantially the risk of stroke and other vascular events, said Alberto Espinel, Head of R& D for Pharmactive.

Aged Black Garlic Health Benefits

Aged garlic is simply garlic that hasnt gone through the full fermentation process.

If it doesnt sit and pickle in the target heat and humidity conditions for long enough, it wont turn black. Instead, itll end somewhere on the spectrum between raw white garlic and fully fermented black garlic.

Its health benefits also sit at the midpoint between those of regular and black garlic.

Because it has transformed a little, its chemical properties will also have changed just not all the way. This means it might have certain effects that are more like those of raw garlic and some that are more similar to those of black garlic.
